I gently cook sliced red onions, new potatoes, thyme in olive oil until soft, then throw in a handful of baby spinach to wilt. Stir this into some lightly whisked organic eggs then season, pour back into a hot pan, dot some goat's cheese on top then bake in a hot oven until set.
