I gently cook sliced onions, courgettes, petit pois in olive oil until soft, add a handful of baby spinach and cooked brocolli florets then season and add to some lightly whisked organic eggs with some fresh shredded mint leaves. Pour into a hot pan, spirinkle with feta crumbs and bake in a hot oven until set.
