I spread black olive tapenade onto rolled out puff pastry, then layer with sliced tomatoes, some crumbled feta, a drizzle of olive oil and shredded basil leaves before cooking in a hot oven until golden and crisp.

  • Warm for a few minutes in a pre heated oven (190 degrees C). Goes well with a rocket and balsamic salad.
