Celeriac, chestnut and bacon soup

Serves 2

Ingredients:

Extra virgin olive oil, shallots, garlic, thyme, bay leaf, celeriac, chestnuts, bacon, whole milk, chicken stock, double cream, sea salt, freshly ground black pepper

How it's made:

I gently fry, bacon lardons, shallots, garlic and thyme in olive oil until soft, then add diced celeriac, chicken stock, chestnuts, milk and salt and pepper, then simmer until the celeriac is soft. Then I blend with double cream until smooth.

To prepare:

Transfer to a pan and heat on hob over a medium heat until hot.
