Celeriac, chestnut and bacon soup

Serves 2

Ingredients:

Extra virgin olive oil, shallots, garlic, thyme, bay leaf, celeriac, chestnuts, bacon, whole milk, chicken stock, double cream, sea salt, freshly ground black pepper

How it's made:

I gently fry, bacon lardons, shallots, garlic and thyme in olive oil until soft, then add the chopped celeriac, chicken stock and milk then simmer until the celeriac is soft. Then i blend with cream until smooth and season to taste.

To prepare:

Transfer to a pan and heat on hob over a medium heat until hot.
