Ingredients:
Olive oil, garlic, basil, shallots, dried oregano, vegetable stock, chopped tomatoes, mascarpone, sea salt, freshly ground black pepper
How it's made:
In a good glug of olive oil i simmer garlic and dried oregano, then before they start to colour vegetable stock & chopped tomatoes are added, then simmered before finishing with mascarpone, fresh basil, sea salt & freshly ground black pepper.
To prepare:
Transfer to a pan and heat on hob over a medium heat until hot.
